Tips for Success

  • Make bowls. Use the BBQ chicken to top my Chicken Burrito Bowl. You can also make your own bowl with rice, black beans, grilled corn, and diced avocado.
  • Use the stove. Set a skillet over medium-high heat with 1/2 tablespoon vegetable oil. Cook the chicken as usual until it’s no longer pink in the center.
  • Marinate it. Place the chicken in a large Ziploc bag. Add 1 cup orange juice, 1/2 cup water, 1 tablespoon fresh cilantro, 1/4 teaspoon red pepper flakes, and 1/2 teaspoon salt. Seal the bag and shake well. Refrigerate it for 30 minutes or up to overnight for more flavor.
  • Swap the protein. Using turkey breasts instead of chicken is an easy variation of this recipe.
  • Shred it. Use two forks to gently pull the chicken in opposite directions until completely shredded. Turn it into tostadas or tacos to use up any leftovers.

How To Store & Reheat Leftovers

I love freezing it in serving-size portions so it’s easier to thaw throughout the month.

  • Fridge: Place it in an airtight container for up to 3 days. Discard it immediately if it tastes sour or bitter.
  • Freezer: Spread out the chicken in a baking tray and freeze it for 1 hour. Transfer it to a freezer bag and freeze for up to 3 months. Thaw overnight in the fridge.
  • To reheat it: Sprinkle it with 1/4 teaspoon water and microwave it in 20-second increments. You can also heat it in a pan (covered) over medium heat for 7-8 minutes.
